Hello everyone sorry its been a while since our last blog post but things have been a little bit hectic this year! Chels and I got married (just before the covid lockdowns - phew!) and tried enjoy our honeymoon but it got cut short by two weeks! With all the time we have had in lockdown we have been cooking and baking up a storm! I like to go the food markets and make food based on whatever is on special and yesterday we picked up about 12 kiwifruits for $2, so below is our recipe for a kiwifruit and coconut cake! This has been a hit in our household and I've had to make this twice already because it doesn't last long! If you do make this let us know how it went on our instagram or facebook pages :)
125 g butter, softened
1 cup sugar
2 large eggs
1 cup flour
1 teaspoon baking powder
1/2 cup shredded coconut
1 tablespoon sugar, extra
1 tablespoon icing sugar
Grease a 20 cm, loose-based cake pan and lightly dust with flour. Pre-heat the oven to 180°C .
Cream the butter and sugar with an electric beater for 3 minutes. Add the eggs and beat well. Sift in the flour and baking powder, add coconut and stir to combine then beat on high speed for about 2 minutes, until well combined.
Spread the batter into the prepared cake pan. Peel and quarter the kiwifruit. Cut each quarter in half and dot evenly over the batter. Sprinkle the fruit with the extra tablespoon of sugar.
Bake for about 50 minutes, until a skewer inserted in the centre comes out clean. Cool for 10 minutes before removing from the pan. When cool, the cake can be stored in an airtight container. Serve dusted with icing sugar and cut in wedges. Serve as a dessert or with coffee
